Delicious Lemon Bars
INGREDIENTS
WHOLE-WHEAT CRUST
1 cup of white whole-wheat flour
1/4 teaspoon of ground nutmeg
1/4 teaspoon of salt
1 cup of all-purpose flour
1/2 cup of plant-based margarine/vegan margarine
4 tablespoons of coconut sugar
LEMON FILLING
2 cups of plant-based yogurt/vegan yogurt
6 tablespoons of cornstarch
3 teaspoons of lemon zest
1/2 cup of freshly squeezed lemon juice
1/4 - 1/2 teaspoon of turmeric powder
4 tablespoons of applesauce
1/2 cup of organic almond milk
1/4 - 1/2 cup of organic cane sugar
INSTRUCTIONS
Preheat the oven to 350° F, and in a medium bowl combine white whole wheat flour, ground nutmeg, salt, all-purpose flour and coconut sugar, add vegan margarine and mix the ingredients together until well combined.
Press the dough firmly into a 13x9 -inch baking pan and bake in the preheated oven for 15 minutes and set aside.
In a large mixing bowl stir together yogurt, lemon zest, applesauce, cornstarch, turmeric powder and cane sugar, add gradually lemon juice, almond milk and mix until smooth.
Pour lemon filling into the cooled prebaked crust and bake for 20 - 25 minutes, allow it to cool completely at room temperature and firmly cut into bars with a cutter.
Note: Cover any remaining bars firmly with plastic wrap and refrigerate to enjoy within 48 hours.
