Vegan Nutritious Oatmeal Coconut Cookies that keeps their shape

Vegan Oatmeal Cookies recipe for celebration! These yummy Cookies are Occasional sweet dessert and perfect for gathering, they are made with ground Flaxseed and holds their shape due to the ingredients used. They are soft and Dairy Free. My Plant-Based Oatmeal Cookies are made with Coconut Oil, Oatmeal, unsweetened Applesauce with other simple ingredients and topped with roasted chopped Hazelnuts. These flavor packed chewy Cookies can be enjoyed by serving them with fruit purees, smoothie bowls and other healthy Plant based desserts or simply enjoying them as yummy Snacks.

I recommend dried and fresh Fruits when you crave sweets, so add more dried Fruits to your Cookies if you are a regular eater and try to bake with no added Sugar.


Ingredients

  • 2 1/2 cups Oatmeal

  • 1 tsp ground Cinnamon

  • 1/4 tsp Salt

  • 3 tbsp Ground Flaxseed

  • 1/4 cup Coconut Flour

  • 1 tsp Vanilla Extract

  • 1/2 cup Coconut Sugar

  • 1/2 cup unsweetened Applesauce

  • 1/4 cup roasted chopped Hazelnuts

  • 7 tbsp melted Coconut Oil

Instructions:

  1. Whisk the wet ingredients together with the Coconut Sugar,

  2. Mix the remaining dry ingredients in a separate Bowl.

  3. Combine the wet ingredients and the mixed dry ingredients together.

  4. Stir until dough is formed.

  5. Don't chill the Dough.

  6. Grease a baking tray lightly with Vegetable Oil or Baking Spray

  7. Line the Baking Tray with Parchment Paper.

  8. Scoop the dough onto the prepared Baking Tray.

  9. Flatten your Dough balls before baking.

  10. Decorate with roasted chopped Hazelnuts

  11. Bake at a bit lower temperature than usual, a difference of 70° F at least will make a big difference, make sure your rack is positioned in the centre of the Oven to ensure efficient baking,

  12. Bake in a preheated Oven for 13 minutes depending on your Oven, baking time varies so keep eye on your sweet Cookies to prevent burnt Bottom. These Cookies will hold their shapes even in the Oven so don't expect a wide flattened Cookies with this recipe.

  13. Start checking the bottom earlier for browning, you can leave them for extra minutes and check again. The Cookies are done when you notice dull shine, firm edges and golden bottom so keep eye on your Cookies.
