Oatmeal Pie Crust
1 cup Oat Flour
2 cups Pastry Flour or All Purpose Gluten Free Flour
1/2 tsp ground Nutmeg
1/4 tsp Salt
3/4 cup cold Water
200ml Canola Oil
Cranberry Apple Filling
3 cups fresh Cranberries
1 1/2 cups chopped Apples
1/2 cup + 5 tbsp Water
2 tbsp Cornstarch
1/4 cup Maple Syrup
1/4 tsp Ground Nutmeg
2 tbsp Vegetable Oil
1/4 tsp Salt
Oatmeal Crumble Topping
1/2 cup oat flour
1/4 cup Coconut Sugar
1 cup All Purpose Flour or All Purpose Gluten Free Flour
10 tbsp Canola Oil
INSTRUCTIONS
Oatmeal Pie Crust:
Preheat the oven to 375° F
Combine the ingredients for the pie crust together in a food mixer or by hand.
Add more water if necessary and mix together until well combined and you can form a ball.
Shape dough into a disk, seal it in a medium bowl and refrigerate for at least 20 minutes or until ready to use.
Roll out the dough on a floured surface and shape it into a circle that will suit your Pie Plate or Tart Pan.
Place it carefully into the pan and use your fingers to crimp the edges.
Pickle 3 or more holes in the crust to allow steams to escape while baking
Pre-bake the crust for 10 minutes and allow it to cool completely at room temperature
Cranberry Apple Filling:
Place a Saucepan on a stove, combine the chopped apples, cranberries, nutmeg and half cup of water together and in the saucepan and stir continuously over a medium heat.
Dissolve the cornstarch with about 5 tablespoons of water and stir in together with the other ingredients.
Turn off the heat, stir in the maple syrup, just 2 tablespoons of vegetable oil and allow it to cool at room temperature
Oatmeal Crumble Topping:
In a medium bowl, combine and mix the ingredients for the topping together using a fork until fine crumbs are formed.
STEPS
Preheat the oven to 375° F
Pour the filling into the prepared pie crust and sprinkle the oatmeal crumbs on top.
Place the crust with the filling and topping into the preheated oven and bake for 25 - 30 minutes or until lightly browned.
Allow the pie to cool completely at room temperature before serving.
STORAGE
Put pie after 12 hours in an air tight container and keep in the refrigerator until ready to serve Enjoy pie preferably within 48 hours.
