These satisfying easy to make vegan Mini Apple Pies with perfect Crust and delicious apple filling are so tasty and bursting with flavor. Apple pies made with chia seeds are special for busy days and perfect for when you're on the go! This recipe is so simple that you can easily prepare these amazing yummy family favorite pies easily at home.
INGREDIENTS
Pastry Dough:
5 cups All Purpose Flour
1/2 tsp Salt
2 tsp Baking Powder
3 tbsp Chia Seeds
2 tbsp Organic Cane Sugar
10 tbsp of Coconut Milk or Soy Milk (add more if necessary)
200g Vegan Butter
1/3 cup warm Water for the chia seeds (110°F)
1/2 tsp ground Nutmeg
Filling
6 medium Apples
2 tbsp of white flour
2 tbsp of Organic Pure Cane Sugar
1 tsp Vanilla Extract
1/2 tsp ground nutmeg
INSTRUCTIONS
Mix chia seeds with the warm water, stir and set aside.
Combine the dry ingredients firstly and add the soaked chia seeds with the other ingredients.
Mix together with mixer or by hands.
Mix until dough is smooth but not sticking to the hands,
Add more coconut milk if necessary (you can also replace the coconut milk with water)
Put and cover the dough in a medium bowl and refrigerate dough for at least 30 minutes or until ready to use.
Preheat your Oven to 350°F
Core and dice the apples.
Combine the diced apples with filling ingredients in a large bowl.
Roll out the dough on a floured work surface or dough mat.
Cut out individual rectangular pastry dough and add the filling..
Place parchment paper into baking tray and transfer the unbaked pies into the tray
Bake for 30 - 35 minutes or until lightly browned
Allow the pies to cool at room temperature and enjoy your delicious Chia Apple Pie Pockets.
STORAGE
The pies should be stored in an air tight plastic container after cooling completely at room temperature. Put the container in the refrigerator after 24 hours. I love enjoying them warm and soft so I usually warm the pies in the microwave for about 2-3 minutes before eating them but you must not do that!
