INGREDIENTS
All purpose flour - 3 cups
Baking powder - 3 1/2 teaspoons
Salt - 1/2 teaspoon
Homemade unsweetened applesauce - 1/2 cup
Vegetable oil - 3/4 cup
Fresh strawberries - 2 cups
freshly squeezed lemon juice - 2 tablespoons
Canned coconut milk - 1 cup
Organic cane sugar - 1/2 cup
Vanilla paste - 1 tablespoon
Strawberry topping (optional)
1 tablespoon of flour for the strawberries
INSTRUCTIONS
Mix the dry ingredients together in a mixing bowl: Add flour, salt, baking powder and organic cane sugar into the bowl and mix together..
Add the wet ingredients; Combine with unsweetened applesauce, vegetable oil, lemon juice, canned coconut milk and vanilla paste.
Mix the ingredients together until just combined
Mix about 2 cups of small strawberries or diced strawberries with 1 - 2 tablespoons of flour and stir into the batter.
Bake it in a preheated oven for 35 minutes or until a toothpick inserted into the middle comes out clean.
Baking time varies so keep eye on your loaf to prevent too much browning. #healthybread
