The Easiest Plant Based Strawberry Bread Recipe

INGREDIENTS

  • All purpose flour - 3 cups

  • Baking powder - 3 1/2 teaspoons

  • Salt - 1/2 teaspoon

  • Homemade unsweetened applesauce - 1/2 cup

  • Vegetable oil - 3/4 cup

  • Fresh strawberries - 2 cups

  • freshly squeezed lemon juice - 2 tablespoons

  • Canned coconut milk - 1 cup

  • Organic cane sugar - 1/2 cup

  • Vanilla paste - 1 tablespoon

  • Strawberry topping (optional)

  • 1 tablespoon of flour for the strawberries


INSTRUCTIONS

Mix the dry ingredients together in a mixing bowl: Add flour, salt, baking powder and organic cane sugar into the bowl and mix together..


Add the wet ingredients; Combine with unsweetened applesauce, vegetable oil, lemon juice, canned coconut milk and vanilla paste.


Mix the ingredients together until just combined


Mix about 2 cups of small strawberries or diced strawberries with 1 - 2 tablespoons of flour and stir into the batter.


Bake it in a preheated oven for 35 minutes or until a toothpick inserted into the middle comes out clean.

Baking time varies so keep eye on your loaf to prevent too much browning. #healthybread


Allow it to cool completely at room temperature before enjoying your delicious #cake bread!

Storage

Wrap it in aluminium foil, plastic wrap or simply wrap it in a paper and store in an airtight container.
