I love this awesome cheesecake wrapped in hazelnut crust for every celebration! It's a perfect cake to celebrate with if you are looking for a healthier cheesecake that is made with wholesome ingredients. This is basically a German style of cheesecake. German cheesecake is made with pastry crust instead of Graham Crackers but this awesome cheesecake is made with a combination of all purpose flour and wholesome ground hazelnuts and the taste is incredibly sweet. The amount of sugar that you can use for this recipe solely depends on you. You can increase or decrease the quantity of sugar that you are adding.
HAZELNUT CRUST
1 cup All Purpose Flour
1/2 cup Ground Hazelnuts
1/4 cup Coconut Sugar
1/2 cup Vegan Butter
2 teaspoons Vanilla Extract
1/2 teaspoons ground Nutmeg
1/4 teaspoon Salt
FILLING
450g Simply V Vegan Streichgenuss or any vegan cream cheese substitute
1 cup creamy coconut cream
1/3 cup organic cane sugar
3 teaspoons vanilla extract
74g (2 sachets) Vegan Vanilla Pudding Powder
1/2 teaspoon ground nutmeg
STRAWBERRY SAUCE
3 cups fresh strawberries
1/2 cup freshly squeezed orange juice
3 tablespoons maple syrup
2 tablespoons cornstarch
TOPPING
1/2 cup fresh strawberries
1/2 cup fresh raspberries
1/4 cup fresh blackberries
INSTRUCTIONS
Step 1
Preheat the oven to 350 degrees.
Combine the dry ingredients for the crust in a large bowl and add gradually the butter and other wet ingredients. Mix until well combined. You can mix by hands or in a mixer.
Transfer the dough into a 10-inch cake pan preferably with a removable bottom. Scatter the dough evenly and press firmly into the pan.
Bake the crust partially for 12 minutes and allow it to cool completely at room temperature.
Step 2
Combine the filling ingredients in and whisk to smooth consistency. Pour the prepared filling into the cooled crust and bake for about 70 minutes.
You can cover the top with foil after 40 minutes to prevent browning.
Step 3
Remove pan from the oven after about 70 minutes and allow it to cool at room temperature (baking time vary).
Step 4
Chop the fresh strawberries add combine with freshly squeezed orange juice. Boil over a medium heat, add other ingredients and stir until thick. Allow the sauce to cool completely and pour sauce on top of the cooled cheesecake and decorate with fresh berries.
