This recipe is not just for mango lovers but for everyone who indulge in healthy eating habits. Baking with nutritious ingredients will limit the amount of calories in baked goods so we should try to avoid high calorie filled ingredient as much as possible. Baking doesn't kill all the nutrients in fruits after all so we can still benefit from the nutrients in mangoes combined with the other healthier ingredients used in making these awesome bars.

For a gluten free option use all-purpose gluten free flour in place of all-purpose regular flour. Follow this simple recipe to learn how to make perfect mango bars.


INGREDIENTS

Crust

  • 2 cups all purpose flour or all purpose gluten free flour

  • 1 cup oat flour

  • 1 tsp baking powder

  • 3/4 cup vegan butter at room temperature

  • 4 tsp maple syrup

Filling

  • 900ml fresh mango puree

  • 3 tbsp cornstarch

  • 4 tbsp ground flax-seed

  • 2 tsp vanilla extract

  • 3 tbsp organic cane sugar

Topping

  • Roasted chopped hazelnuts



How To Make Easy Fresh Mango Puree

Preparing mango puree at home is so easy with your blender! To make this simple puree, peel the skin of 3 large ripe mangoes with a sharp peeler. Cut the sides away from the pit and cut them into slices. Transfer the mango slices to your mixer and blend the mangoes until smooth to make simple mango puree.


INSTRUCTIONS


  1. In a medium bowl, combine the ingredients for the crust.

  2. Mix until well combined with a smooth texture.

  3. Rub a small amount of plant-based butter or oil on a 9-inch square baking tray or pan and place parchment paper into it.

  4. Spread the dough evenly into the tray, then press down with the palm of your hand.

  5. Pre-bake the crust for 15 minutes at 350°F and set aside to cool at room temperature.

  6. Combine the ingredients for the filling and whisk until smooth.

  7. Pour the filling mixture evenly on top of the crust:

  8. Sprinkle chopped roasted hazelnuts on top and bake for 30 - 35 minutes at 350° F

How to store homemade Mango Bars

These mango bars are better off at room temperature for about 14 hours. Wrap each individual bar in plastic sheets after this time and store in the refrigerator with an airtight container to preserve the taste and texture for the next 24 hours.
