WINTER SWEET POTATO SALAD RECIPE WITH HOMEMADE AVOCADO MAYO
I love eating nourishing salad and Potato Salad with loads of leafy greens is always my favorite. This delicious and satisfying winter potato salad with loads of vitamins is not just for lunch but a perfect healthy dinner to enjoy with family and friends. #potatosalad
WINTER POTATO SALAD INGREDIENTS
3 medium colourful sweet peppers (green, red, yellow)
1/4 cup of chopped red onion
I cup of chopped parsley
3 cups of chopped kale
4 cups of diced and roasted sweet potatoes (Instructions below)
2 cups of diced ripe avocados
I canned chickpeas (can be roasted for extra flavour)
I cup of diced cherry tomatoes
Dried white onion flakes (optional)
1 cup of chopped arugula
Dried salad herb mix (topping) #sweetpotatosalad
AVOCADO MAYO DRESSING
1 medium avocado
1 clove of garlic
2 teaspoons of apple cider vinegar
5 tablespoons of water
3 teaspoons of freshly squeezed lemon juice
1/4 teaspoon of salt
1 tablespoon of extra virgin olive oil #veganpotatosalad
Instructions:
Wash and peel 2 medium sweet potatoes.
Slice, dice and season to taste.
Bake in a preheated Oven for 25-30 minutes or until tender and allow to cool completely.
Prepare the fresh ingredients, wash and chop the leafy greens, peppers, peel and dice the avocados.
Combine the salad ingredients in a large bowl and set aside.
In a blender, combine the ingredients for the avocado mayo dressing and mix until smooth and creamy.
Pour the dressing on top of your salad and enjoy fresh. #healthypotatosalad

1 1/2 tbsp of Extra Virgin Olive Oil
1/4 tsp of Salt
1/4 tsp of Black Pepper
2 cups of Baby Spinach-chopped
1/4 cup steamed Cauliflower
1/3 cup dried Cranberries
A handful of Parsley leaves.
2 sticks of Celery
2 medium avocados #lunch
WHITE WINE VINAIGRETTE
5 tbsp of Extra Virgin Olive Oil
1 tbsp Lemon juice
2 tbsp of White Wine Vinegar
1 tbsp of yellow Mustard
1/4 tsp of Salt
1/4 tsp Black Pepper
I cup of chopped Parsley #dinner
Instructions:
