I love this tasty nutritious Coconut Pizza with loads of nutritious ingredients, This Pizza has Low Calorie and with no added Sugar due to the ingredients used. The delicious smooth Applesauce Crust is made from unsweetened Applesauce, Coconut Flour and other healthy ingredients and is bursting with natural sweetness of Apple and Vanilla flavor, covered with Zesty Coconut Cream frosting made from Coconut Cream without added Sugar but tastes so good.
I love the taste and flavor of Orange mixed with Vanilla flavor, so I added 1 tbsp of Orange Zest and Vanilla Extract with chopped Apricots and the result is a flavor and taste that alters the taste of Coconut. I sweetened my frosting with a pinch of Stevia but you can add any other sweetener that suits your taste. If you're using Maple Syrup, add not more than 1 tablespoon and restrain from adding more liquid to maintain the texture of your yummy frosting.
My fruit topping is a mix of organic fresh fruits and they actually added colour, taste and flavor to this nutrient dense Coconut Fruit Pizza.
Ingredients
Applesauce Coconut Crust
1 cup Coconut Flour
1 cup (250g) Applesauce
3 tbsp Coconut Butter
1 tbsp freshly grated Orange Zest
1/4 tsp Baking Powder
1/4 tsp Salt
1 tsp Vanilla Extract
1 tbsp freshly squeezed Orange Juice
Zesty Coconut Cream Frosting
2 Cans of Coconut Cream (400ml each) not Coconut Milk!
1 tbsp Vanilla Extract
2 tsp freshly grated Orange Zest
1/4 tsp pure Organic Stevia
Instructions
Crust
Combine the Ingredients for the Crust.
Mix them together using the Food Processor, Hand mixer can work too.
Start with the dry ingredients before adding the wet ingredients.
Mix until well combined and feel the texture to confirm.
Spread the Dough into your Pizza Pan (watch Video)
Press the Dough firmly into the Pan.
Bake in a preheated Oven until the edges are lightly browned (I baked mine for 13 minutes)
Baking time varies so keep eye on your Crust to avoid much browning.
Frosting
Allow the Coconut cream to chill for at least 8 hours in the Fridge.
Separate the clear Coconut Water carefully from the hardened Cream that mostly stays on top after chilling.
Mash the Coconut Cream carefully with Fork if it is too hard and mix immediately with the other ingredients. This will help the Coconut cream to mix easily.
Mix until smooth and refrigerate immediately for at least 3 hours.
Spread the chilled frosting on the Pizza Crust.
Decorate with Coconut chips and chopped Apricots and refrigerate again for at least 1 hour before topping with Fruits.
Cover the Coconut Pizza in air tight wide Cake container until ready to Serve.
Leave your delicious Coconut Fruit Pizza dessert always in the Fridge and enjoy as fresh as possible within 48 hours.
