I love lentil salad and eating this amazing salad every week is what I have been doing for the past 5 years for a nutrient boost and keeping my weight under control! This beautiful salad is one of the most nutritious filling salad that I would like to recommend to anyone that enjoys a perfect home dessert that is colorful as well as nutrient packed with simple ingredients. This recipe is simple to make at home and one of the best dinners to enjoy and share with family and friends.
Brown Lentils: These gluten free seeds are rich in fibre and folate and low in calories.
Parsley is rich in antioxidants and perfect for most salad dishes.
Bell Peppers are rich in vitamins and minerals with extra rich color and sweet taste that you'll love for every salad.
Cucumber is high in nutrients with a mild lightly sweet flavor that you'll love for every lentil salad.
Mint with its subtly sweet taste is perfect and optional for this salad.
SALAD INGREDIENTS
1 cup of Lentils
1 cup diced Bell Peppers (3 colors)
3/4 cup chopped Cucumber
1/4 cup Mint Leaves
1/2 cup Plum Tomatoes
1/2 cup chopped Parsley
3 cups of water (for cooking lentils)
1/4 teaspoon of Salt
ORANGE VINAIGRETTE
1/2 cup freshly squeezed Orange Juice
1/8 teaspoon freshly ground Black pepper
1/4 teaspoon Salt
2 teaspoons yellow Mustard (not Dijon)
5 tablespoons Extra Virgin Olive Oil
INSTRUCTIONS
Pour water into a large Saucepan to cook the lentils. Rinse the dry lentils in cold water thoroughly and remove any debris, drain them and add to a large saucepan. Bring to a boil over a medium heat, simmer for 30-35 minutes or until tender. Add 1/4 teaspoon salt and pour cooked lentils into a fine mesh sieve. Set aside to cool completely.
Combine the Vinaigrette ingredients and whisk until combined or combine the ingredients, cover in a jar and shake vigorously and refrigerate.
Wash the veggies thoroughly, place them on a cutting board, cut and dice them in bite size pieces. it is always better to chop them small for a more appetizing and flavorful meal.
Combine together the cooked lentils with the chopped veggies and toss with the orange vinaigrette until combined.
Enjoy your salad immediately! I love eating fresh salads and I know that it's always better to eat them as fresh as possible.
STORAGE
Put the salad in air tight container to minimize moisture, store in the refrigerator and enjoy within the next 24 hours.
