Homemade bread is always the best, at least you can easily add some flavors and taste to your bread. I baked this bread with flax Egg, Organic Soy Milk and other simple selected ingredients and the texture is absolutely super. Baking your bread at home is not only fun but another way of adding extra nutrients to your Loaf. This Raisin Bread (German Rosinenbrot) is a fresh Bread that you can easily bake and enjoy at Home. The healthy sweet Organic Raisins used for this recipe were soaked for 1 hour.
The Bread Dough was easily kneaded in a large Bowl because the ingredients were accurately measured and the Dough was smooth and easy to knead without adding extra flour or liquid. You can knead your Dough even much easier on a smooth work surface but don't forget to allow the Bread to rise accurately before baking. My Coconut Glaze is optional but necessary if you need additional colour and taste on your Bread Crust, so before putting them in the Oven, I gave the two Loaves a Coconut wash with a mixture of 3 ingredients and it resulted in a golden and shiny brown colourful Loaves.
INGREDIENTS
1 1/2 cups Raisins
2 1/2 tsp Active Dry Yeast
4 cups All purpose Flour
Flax Egg ( Mix 2 tbsp Ground Flax-Seed with 6 tbsp Water)
1/2 tsp Salt
1/2 cup Coconut Sugar
1/2 cup (125ml) Vegetable Oil
1/2 cup slightly Warm Water (not hot Water) about 108 F
1/4 cup - 1/2 cup Soy Milk (125ml) start with 1/4 cup and add the remaining gradually.
COCONUT GLAZE
1 tbsp Coconut Milk
1 tsp Coconut Sugar
1 tsp Vegetable Oil
INSTRUCTIONS
Dissolve Yeast in the water that is slightly warm but sure not hot Water.
Combine the warm Soy Milk, Vegetable Oil, Salt, Flax Egg and Coconut Sugar, add half of the Raisins and mix together.
Start adding the Flour and the Yeast mixture.
Add the remaining Raisins and knead immediately with hands.
Grease a large Bowl with Vegetable Oil and put the Dough inside, turn the Dough upside Down to grease the top.
Cover with cloth or Kitchen Towel and keep in a warm place, preferably in a Kitchen.
Allow Dough to double in Size from around 1 hour to 2 hours.
Divide the Dough into two portions.
Place them in 2 medium Bowls.
Cover again with Cloths or Kitchen Towels for 30 minutes.
Roll the Dough into Shapes.
Grease 2 Bread Pans lightly with Oil and place the Dough inside
Cover again until the Dough double in size.
Mix together 1 tbsp Coconut Milk, 1 tsp Coconut Sugar and 1 tsp Vegetable Oil and brush the mixture on top of the 2 loaves (optional)
Preheat the Oven to 350° F and bake for 25-30 minutes or until Bread feel firm to touch. You can still use instant read thermometer and be absolutely sure.
Allow to cool for 4 hours at least before serving
