Ingredients

  • 4 cups of broccoli florets

  • 1 cup of chopped carrots

  • 500g of mushrooms

  • 1 canned red kidney beans

  • 1 canned chickpeas

  • 1 cup of diced bell pepper

  • 1/2 cup of fresh basil leaves

  • 1 teaspoon of ground black pepper

  • Salt and freshly ground red paprika to taste

  • 3 cups of cooked and cooled brown or white spaghetti

  • 3 cloves of garlic (minced)

  • 1 teaspoon of minced ginger

  • 1 teaspoon of thyme

  • 1/2 cup of fresh peas

  • Extra virgin olive oil

  • 1/4 cup of chopped onions

  • Lemon slices for garnish

  • 3 cups of chopped fresh spinach

  • 1 cup of chopped fresh parsley #dinner

How to Make Veggie Spaghetti Stir Fry

  1. Cut the vegetables – Prepare the vegetables by cutting or chopping them in uniform sizes. #veganfood

  • Start making the stir fry by combining onion with mushrooms in a wok or a flat bottomed pan.

  • Add olive oil and stir fry for 2 minutes at a medium heat. #food


  • Add the cooked spaghetti and continue to stir for 3 minutes.

  • Add the fresh vegetables, salt, garlic, ginger, black and red ground peppers to taste.
