Healthy Apple Oatmeal Crumb Cake Recipe you'll love for every Occasion.



This Wholesome dairy free Vegan Oatmeal brown Cake is super delicious and was enjoyed immediately after cooling at room temperature without any left over. I love this healthy Cake and prefer to share such a filling Cake with friends. I used grated Apples as the topping and covered it completely with Oatmeal Crumbs. It's moist and made with Oat flour, unsweetened Applesauce, Organic Soy Milk with other ingredients and sweetened with Coconut Sugar. It's perfect and so nutritious with rich Vanilla flavor.


This recipe is easy with Oat Flour. You can easily make your Oat Flour at home with your Blender or food processor. Place the Oats in the food processor and blend until they turn into a fine powder. You need just 3 cups of Oat Flour, so store the remaining in an air tight container. It can last for more than 2 months if properly stored.


INGREDIENTS

  • 3 cups Oat Flour

  • 1 medium Apple (grated)

  • 1 cup Coconut Sugar

  • 1/2 cup Vegetable Oil

  • 1/4 tsp Salt

  • 1 1/2 tsp Baking Powder

  • 1 tsp Baking Soda

  • 1/2 cup unsweetened Soy Milk

  • 1/2 cup unsweetened Applesauce

  • 1/2 tsp ground Cinnamon

  • 2 tsp Vanilla Extract


OAT CRUMBS

  • 1 cup Oat Flour

  • 1/4 cup Coconut Sugar

  • 1/4 tsp ground Cinnamon

  • 4 tbsp Vegetable Oil


APPLE TOPPING

  1. Wash and peel one medium Apple.

  2. Grate the Apple and soak it with Lemon Juice (use Juice from 1 fresh Lemon)

  3. Drain out the Juice and spread the grated Apples onto the Batter (watch Video)


INSTRUCTIONS

  1. Preheat the Oven to 350° F

  2. Combine the ingredients for the Oat Crumbs together with a fork until Crumbs are formed and set it aside (watch Video)

  3. Combine the Ingredients for the Batter, start with the wet ingredients including the Coconut Sugar.

  4. Whisk the wet ingredients with the Coconut Sugar until well combined.

  5. Mix the dry ingredients together in a separate Bowl.

  6. Sift the mixed dry ingredients to remove any lumps using a strainer (hold the Strainer with one hand and tap with the other hand to move the ingredients through)

  7. Combine the dry ingredients with the wet ingredients until smoothly combined but don't over mix.

  8. Grease a 9-inch round Baking Pan with Vegetable Oil or Baking Spray.

  9. Line the Pan Bottom with parchment Paper and flour the sides of the Pan lightly with 2 tsp of plain Flour.

  10. Pour the Batter into the greased Cake Pan.

  11. Spread grated Apples on top of the Cake Batter.

  12. Cover the grated Apples with Oatmeal crumbs.

  13. Bake in the preheated Oven for 35 minutes or until the Toothpick inserted into the middle comes out clean (Baking time varies)

  14. Allow the Cake to cool at room temperature before cutting and serving.

STORAGE

You can keep it in an air tight Container at room temperature for up to 48 hours or store in the Fridge for 72 hours but this Cake is at its best on the first day at room temperature, so enjoy your Cake as fresh as possible.
