Strawberry Cake Recipe

INGREDIENTS
4 cups of sifted cake flour
5 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of organic cane sugar
1 cup of vegetable oil
1/2 cup of unsweetened applesauce
1 1/2 cups of coconut milk
3 teaspoons of vanilla extract
1 tablespoon of maple syrup
5 - 6 cups of fresh strawberry smoothie
3 cups of fresh strawberries
2 teaspoons of agar agar powder
1 tablespoon of freshly grated lemon zest

INSTRUCTIONS
Preheat the oven to 350 degrees F.
Mix together cake flour, baking powder, salt, cane sugar and any other dry ingredients that you are using in a mixing bowl. Add gradually the wet ingredients starting from applesauce, vegetable oil and coconut milk. Combine together with the mixer until smooth.
Combine the ingredients until smooth Grease a medium baking dish with a baking spray or line the dish with a parchment paper. Pour and spread the cake batter evenly and bake for about 35 minutes or until a wooden toothpick inserted into the middle of the cake come out clean.
Let the cake cool at room temperature Let the cake cool completely at room temperature. Poke holes in the cake using a fork, wooden skewers or a stainless straw.

Blend 6 to 7 cups of fresh strawberries to make a pure strawberry smoothie using the best seasonal strawberries.
Pour 1/2 cup of water in a saucepan and place it on a cooking stove. Boil and stir in agar agar powder at a low to medium heat while stirring continuously. Stir in the strawberry smoothie, add vanilla extract and maple syrup and simmer for 2 to 3 minutes. Set it aside to cool slightly.
Make a strawberry Glaze Pour and spread evenly the strawberry glaze on top of the cake and let the glaze sink down inside the cake holes.
Pour the strawberry glaze gradually on top of the cake Use fresh strawberries as topping.
Fresh Strawberry Topping Refrigerate for about an hour before serving
