INGREDIENTS
Hazelnut Crust
1 and 1/2 cups of all purpose flour
1/2 cup of ground hazelnuts
1/4 teaspoon of salt
1 tablespoon of organic cane sugar
1/2 cup of cold vegan butter
AVOCADO FILLING
5 medium avocados
1 and 1/4 cups of soaked cashew nuts
2 tablespoons of lemon juice
2 tablespoons of lime juice
2 tablespoons of orange juice
INSTRUCTIONS
Pour room temperature water into the cashew nuts and soak them for at least 6 hours or pour hot water into the cashew nuts and soak them for 1 - 2 hours.
Preheat the oven to 350° F
Combine all the dry ingredients either by hand or electric mixer, add the butter and mix until combined.
Press the dough into a medium pie pan and bake for 12 to 15 minutes.
Cut and dice the avocados and transfer into the power blender, add the soaked cashews and the citrus juice. Blend until smooth,
Pour the avocado filling into the pie crust, cover tightly and refrigerate for at least 4 hours before serving.
Note: Cover the avocado pie in an air tight container and enjoy it as fresh as possible!
