Summer Plant-Based Cobb Salad💕
I love avocado lime dressing! It's special for this salad and perfect for most summer salads. It is simply the best dressing for every homemade cobb salad. This recipe is easy and healthy. I actually made a big salad bowl but you can adjust the ingredients to suit you!
Easy Vegan Cobb Salad with Fresh Pineapple Vinaigrette Without Avocado💕
Salad ingredients:
Small red Onion
A Handful of Spinach
1/4 cup white Cabbage
1/2 cup Lettuce
3 Radishes
1 Avocado
1/2 of 1 Carrot
1/4 cup red Cabbage
1/2 of 1 Cucumber
6 Cherry Tomatoes
50g canned Corn
1/4 cup Walnuts
50g cooked canned Chickpeas
1 tbsp Olives
Blueberries (for easy cobb salad recipe)
Add more colorful Veggies (for a perfect summer salad recipe)
Ingredients for the Avocado Lime Dressing:
1 cup of mashed Avocado
2 tbsp of Vegan Mayo
2 fresh Limes
1 tsp white wine Vinegar (optional)
1/4 tsp of black Pepper
1/4 tsp of Salt
1 tbsp of Water
PINEAPPLE VINAIGRETTE INGREDIENTS
1/2 cup of pureed sweet ripe Pineapple
2 tbsp of Extra Virgin Olive Oil
2 tsp of Red Wine Vinegar
1/8 tsp of Black Pepper
1/4 tsp of Salt
2 tsp of Maple Syrup
INSTRUCTIONS
Mix the ingredients for the dressing in a medium bowl and set aside.
Wash and prepare the ingredients for the fresh salad and combine them in a large bowl.
Add the avocado salad dressing or pineapple dressing.
Mix and serve Immediately.
