This delicious Pineapple Bundt Cake is so easy to make and is just the best afternoon treat without added Sugar. This yummy Cake is moist, fluffy and incredibly sweet with amazing vanilla flavor. I love this Cake with a perfect texture and taste. It's so easy to make at home and a perfect Cake for afternoon tea.
Make a simple Pineapple Puree and bake your cake comfortably without adding Sugar. The Pineapple has natural fruit Sugar so adding extra Sugar is unnecessary. Adding Flaxseed to the puree is necessary if you'll love to bake a Cake with a perfect texture.
INGREDIENTS
1/2 tsp Ground Cinnamon
3 cups All Purpose Flour
1 cup Plant-Based Butter at room temperature
1 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Salt
2 tsp Vanilla Extract
500g chopped fresh Pineapple
2 tbsp Ground Flaxseed
INSTRUCTIONS
Preheat the Oven to 350° F
Peel and chop 1 medium fresh Pineapple, you need just 500g of chopped Pineapple.
Combine the chopped Pineapple with 2 tbsp of Ground Flax-seed.
Blend until smooth and set aside.
Combine the dry ingredients together with the Butter.
Stir in the Pineapple puree and the remaining ingredients.
Mix until well combined but don't over mix
Grease a standard Bundt Spring-form baking pan with Oil or use baking spray
Flour the Pan and pour Batter into the pan.
Bake for 25 to 30 minutes (baking time vary depending on the type of Oven you're using so keep eye on your Cake)
Allow the Cake to cool completely before cutting.
