Best Ever Granola Cups You'll Love For Breakfast

I love these delicious simple granola cups, enjoying them for every special breakfast filled with coconut yogurt is not just easy but also packed with essential vitamins to kick start you day. These perfect coconut granola cups are with no added sugar and tastes super good. The recipe is simple and easy to make at home for family and friends.

INGREDIENTS

300g Quick Oats

4 tablespoons unsweetened Applesauce

1 teaspoon Vanilla Extract

100g Coconut Oil (melted)

1 teaspoon ground Cinnamon

Quick Oats are steamed and rolled type of oats that have many health benefits and super easy to mold into cups if the ingredients are properly combined. It's necessary not to over-bake the granola cups to prevent much browning. You can shield the cups after 7 minutes in the oven with a piece of foil to prevent them from browning too quickly.

Unsweetened Applesauce is rich in antioxidants and can be easily prepared at home with few leftover apples. This healthy fat replacer when used without adding artificial sugar will is much more healthier and remains one of my favorites in baking.

Coconut Oil is rich in fatty acid and perfect for baking. I like coconut flavor and adding some tablespoons of this amazing oil is good if you can be able to tolerate coconut flavor. Canola oil is also a good substitute.

Fill the cups with dairy free Coconut Yogurt. You can try soy yogurt or any other plant-based yogurt for the filling.

INSTRUCTIONS

  1. Preheat your oven to 350° F. Combine the oats with cinnamon, add the unsweetened applesauce and coconut oil with vanilla extract and mix until combined and smooth.

  2. Grease a 12 cups muffin pan lightly with butter, scoop dough into muffin tins and press down to form cups.

  3. Bake in a preheated oven for 14 minutes or until golden brown.

  4. Allow to cool completely at room temperature. Fill the granola cups with coconut yogurt, top with fruits and enjoy for breakfast.


NOTE


You can store your granola cups without filling for about 3 days or more at room temperature.

I made these yummy cups without added sugar and the taste is perfect but you can also add some tablespoons of coconut sugar or maple syrup.
